Corned beef and cabbage is a dish commonly enjoyed in the United States on St. Patrick's Day. This tradition originated with Irish immigrants in the 19th century who adapted their customary meal of bacon and cabbage to their new environment.
In Ireland, pork—especially salted pork or bacon—was a staple due to its affordability. However, upon arriving in America, immigrants found that pork was more expensive, while beef, particularly corned beef from kosher butchers, was more accessible and affordable.
They paired it with cabbage because it was cheap and easy to cook, and the dish became a new tradition. Thus, corned beef and cabbage became a popular meal among Irish-Americans and is now a must-have meal every St. Patrick's Day
