From Honeymoon to Adventure: The Thrills of French Polynesia Await

While French Polynesia is celebrated for its luxurious overwater bungalows and as a romantic destination, the islands offer much more with a plethora of adventurous activities.

The clear waters of Bora Bora are perfect for scuba diving, while Moorea's mountainous terrain offers stunning hikes and ATV tours.

Surfing has historical significance in Tahiti, which is also preparing to host Olympic surfers. Unique experiences like swimming with humpback whales and bird watching on Tetiaroa highlight the islands' diverse wildlife offerings.

Eastern Carolina Teacher Arrested on Child Pornography Charges at RDU Airport

The arrest of Jestoni Jumaquio Pestano, a 36-year-old teacher at Halifax County Early College, on charges of child pornography has sent shockwaves through the community.

The investigation, which began in mid-February, traced the sharing of illegal content to Pestano's IP address. His capture at the (Raleigh-Durham) RDU airport, just as he was about to leave for Japan, underscores the swift action taken by authorities to prevent his possible escape.

Pestano faces serious charges, with the potential for more as the investigation continues. His detention without bond highlights the severity of the allegations against him. This case is a stark reminder of the vigilance required to protect minors from exploitation and the collaborative effort of various agencies in enforcing the law.

The Great Husky Homecoming: Jack's 27-Day Adventure Ends in Joyful Reunion

In a remarkable testament to community spirit and determination, Jack, a husky with a penchant for adventure, has finally returned home after a 27-day escapade across Wake County. His journey took him from Umstead Park to SAS, through various locales in Cary, Downtown Raleigh, and eventually to Peach Park in South Raleigh. The extent of his travels, much of which likely went unseen, underscores the sheer scale of his adventure.

Jack's odyssey began shortly after he was placed with a foster family by the team, managing to escape by digging under the fence. What followed was an extensive search operation that spanned nearly a month. The effort to locate and safely retrieve Jack involved a wide array of community members and resources. Central to the success of this mission were Maryanne, a trained trapper who provided invaluable guidance through this emotional process, and Sarah, who played a pivotal role in Jack's capture.

The search for Jack also saw significant contributions from volunteers associated with WakeGov Pets: Wake County Animal Center. These individuals approached the task with the kind of dedication one might reserve for a personal pet, responding to sightings with urgency, assisting in the creation and distribution of signs, and facilitating the strategic placement of food and cameras. The community's involvement extended further, with many offering prayers, sharing updates on social media, and keeping the hope alive that Jack would be found.

This collective endeavor culminated in Jack's safe return, a development that brought immense relief and gratitude from those who had come to care for him. The focus now shifts to ensuring Jack's security at home, with measures being considered that include installing a tracker and possibly even litter box training, all aimed at preventing future escapades. Grilled Salmon with Mango Salsa & Coconut Rice

This Grilled Salmon with Mango Salsa and Coconut Rice is a restaurant-quality meal that you can make and enjoy in the comfort of your own home!

Grilled Salmon Ingredients:

  • Salmon fillets – the main ingredient. Rich in protein and nutrients!

  • Olive oil – keeps the exterior for drying and sticking.

  • Lime – adds so much bright flavor.

  • Garlic – adds another layer of flavor.

Mango Avocado Salsa Ingredients:

  • Mango – adds fresh natural sweetness.

  • Red bell pepper – adds more texture and color.

  • Red onion – a little goes a long way here. Rinse it so it’s not so harsh first.

  • Avocado – adds a delicious creaminess.

  • Cilantro and lime – adds classic Mexican flavors to the salsa

  • Olive oil and coconut water – this isn’t a must here but I like that bit of richness and moisture it adds.

Coconut Rice Ingredients:

  • Coconut Water – it adds flavor to the rice.

  • Canned coconut milk – don’t confuse this with coconut milk beverage. The canned stuff is much creamier and richer.

  • Jasmine rice – stick with jasmine, it has more flavor than plain long grain white rice.

How to Grill Salmon:

  • Whisk together lime juice and zest, garlic, olive oil, salt and pepper in large baking dish.

  • Place salmon in baking dish and let marinate 30 – 60 minutes.

  • Grill salmon until heated through.

  • While the salmon grills, make the coconut rice (you make it like you do regular rice, just with coconut milk) and mango avocado salsa.
